About the Chef

Chef Joel Young grew up in Columbia,MD. He is a graduate of Le Cordon Bleu in Las Vegas, who went on to work with the Wolfgang Puck Fine Dining Group (Tratorria Del Lupo, Chinois, Spaggo) in Las Vegas for three years. Once back in Maryland, he was sous chef at Iron Bridge Wine Co. and Union Jack Columbia, before becoming the Executive Chef of Hudson Coastal

"I have a background in fusion cooking, mixing French techniques with Asian ingredients. Currently specializing in Seafood with emphasis on Atlantic fish and Oysters," Chef Young tells us.

When asked about his favorite dish, he told us, "on our current menu I would say my favorite creation is Shrimp and grits with sweet apple Brandy duck sausage, served with our house made seafood sauce. I am most proud of this dish because it's a unique take on a personal favorite.


The Chef who most influenced me was Chef Eduardo Perez of Trattoria Del Lupo. He came to this country as a migrant field worker eventually earning a spot in the garden of Spaggo(L.A.). He quickly worked his way from gardener to dishwasher to line cook until he gained a spot as Head Chef. In the mid 90's he was asked to relocate to Spaggo in Las Vegas eventually taking over Executive Chef duties at Trattoria Del Lupo. His story and tutelage have been an inspiration to me for over 10 years.
